Low Fat Mashed Sweet Potatoes

LOW FAT MASHED SWEET POTATOES
3 baking sweet potatoes (or yams)
1/4 onion or 2 cloves garlic, chopped
1/4 teaspoon parsley
1/4 teaspoon basil
1/8 teaspoon sea salt
1/8 teaspoon black pepper
1 cup rice milk
Put sweet potatoes (or yams) in covered dish and bake for an hour at 350 F.
While hot, place sweet potatoes in large bowl (including skins!).
Mash sweet potatoes with a masher while adding above ingredients.
Continue mashing until somewhat smooth.
You're done. YUM!
