Brown Rice Blueberry Muffins

BROWN RICE BLUEBERRY MUFFINS
1 cup brown rice flour
1.5 tablespoons fructose
1/2 cup tapioca flour
1 tablespoon potato starch flour
1 tablespoon baking powder
1/4 teaspoon sea salt
3/4 cup rice milk
1/4 teaspoon agar
1/2 teaspoon vanilla extract
1/2 cup blueberries
1 tablespoon cold pressed sunflower oil
1/2 teaspoon xantham gum
Preheat oven to 350 F.
Mix dry ingredients with mixer.
Add rice milk slowly while mixing.
Add vanilla extract, canola oil, and blueberries.
Oil muffin pan and spoon in mixture.
Bake at 350 F for 40 minutes or until top is lightly browned.
Remove muffins from the pan. Yum!!
